Bing Cherry

Cherry_bing Usage: Eating fresh, cooking, sauces, desserts, baked in pies and in salads.

Selection: Good quality Bing cherries will be large, firm and have even deep-red coloring.

Avoid cherries that are soft, have wrinkled skin, are leaking and sticky or that have any visible signs of decay. Immature cherries will be smaller and less juicy while over-mature product will be soft, dull and wrinkled.

Cherries are available mid-June to mid-August with the peak in June.

Chokecherry

These are too tart for most people to eat out of hand, but they make delicious preserves.

Lambert Cherry

Rainier Cherry

Selection: Good quality Rainier cherries will be large, firm and have even deep-red coloring. Rainier cherries usually have some skin discoloration, slight scuffing or brown spotting which often indicates high sugar content.

Avoid cherries that are soft, have wrinkled skin, are leaking and sticky or that have any visible signs of decay. Immature cherries will be smaller and less juicy while over-mature product will be soft, dull and wrinkled.

Rainier Cherries are available late-June to early-August with the peak in June.

Sour cherry

Cherry_sour While sweet cherries are best for eating out of hand, knowing cooks turn to sour cherries for pie fillings, sauces, soups, and jams. Popular varieties include the Montmorency, Morello, and Early Richmond. Sour cherries don't transport well, so they're difficult to find fresh. Canned sour cherries, though, are almost as good. If you want, boost their flavor a bit by adding one tablespoon of Kirschwasser per cup.

Sweet cherry

Cherry_sweet These appear in the summer, with the popular and exquisite Bing cherries arriving in June and July. Other varieties have the virtue of arriving before or after the Bings, but they're often not nearly as tasty. Select cherries that are large, deeply colored, and firm.
